kielbasa– sliced. Any other smoked sausage will work. Just make sure it is smoked sausage – not raw. Raw needs to be cooked first before using.
red and yellow bell peppers – If you like green pepper, you could switch that out.

cheese tortellini– I grabbed the frozen tortellini because it is usually cheaper but if you don’t want to take the time to boil it, just pick up some fresh tortellini in the refrigerated section. This won’t require boiling first. You can pop it in the skillet when you add the chicken broth then cover it and cook for a few minutes until warmed through.
garlic cloves – I prefer fresh minced garlic, but you could use the pre minced stuff in a jar if in a pinch.
chicken stock– or you can use chicken broth. Homemade Chicken Broth would work nicely here too.
Italian seasoning
paprika – this is optional. If you don’t have it, just skip it.
red pepper flakes– an optional ingredient used to bring a little heat.
onion powder and garlic powder – you can really season this however you wish. I just try to use things in the easy meals that most folks would have in their pantry.
shredded mozzarella cheese – you can have fun and switch up the cheese. Use what you love. Like a little heat? Try pepper jack!
Instructions
In a skillet over medium heat add 13.5 ounce package kielbasa, sliced, 1 red bell pepper, diced, 1 yellow pepper, diced, ½ cup finely chopped yellow onion, 1 Tablespoon oil, ¼ teaspoon salt and ¼ teaspoon black pepper. Stir for and cook for about 7 minutes.
While the kielbasa is cooking, cook 19 ounce package cheese tortellini to the package directions and drain. Set aside.
To the skillet with the kielbasa add 2 garlic cloves, minced. Stir for 30 second to 1 minute (until fragrant).
To the skillet add the cooked tortellini, ½ cup chicken stock or broth, 1 teaspoon Italian seasoning, ½ teaspoon paprika, ¼ teaspoon red pepper flakes (if using), ¼ teaspoon onion powder and ¼ teaspoon garlic powder. Stir for 2-3 minutes and allow everything to get coated in the seasonings.
Top with 1 cup shredded mozzarella cheese. Turn off the heat and cover with a lid until the cheese has melted.
